Spicy Tanzanian Pilau Recipe
Pilau is a beloved dish in Tanzanian cuisine, known for its aromatic spices and flavorful taste. Here's how you can make it:
Ingredients:

2 cups basmati rice

500g beef or chicken, cut into cubes

1 large onion, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

2 tomatoes, chopped

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 teaspoon turmeric powder

1 teaspoon black pepper

1 cinnamon stick

4 cardamom pods

4 cloves

4 cups beef or chicken broth

Salt to taste

3 tablespoons cooking oil

Fresh coriander leaves for garnish
Instructions:

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 20 minutes, then drain and set aside.

In a large pot, heat the cooking oil over medium heat. Add the cumin seeds, cinnamon stick, cardamom pods, and cloves. Sauté for about a minute until the spices release their aroma.

Add the chopped onions to the pot and cook until they become golden brown.

Stir in the minced garlic and grated ginger, cooking for another minute.

Add the meat cubes to the pot and cook until they are browned on all sides.

Mix in the chopped tomatoes, turmeric powder, coriander powder, black pepper, and salt. Cook until the tomatoes soften and the oil starts to separate from the mixture.

Add the soaked and drained rice to the pot, stirring well to combine with the spice and meat mixture.

Pour in the broth, bring the mixture to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and let it simmer for about 20 minutes, or until the rice is cooked and the liquid has been absorbed.

Once cooked, remove the pot from heat and let it sit, covered, for an additional 5 minutes.
